Lloyd Reiber has written some very interesting articles on games and CAI.
Check ETR&D for some of his pubs.
I've always thought games were a great way to introduce new content. Check out
http://www.clat.psu.edu/homes/bxb11/Software/Software.html
for some demos of CAI simulations I've developed in the past that have
game-like elements in them.
